They are a delicious, clean eating, low calorie, budget friendly, all in one, filling- but not bloating, kinda dish. Literally all of the good- and none of the bad. The butternut squash gives a nutty sweetness that pairs perfect with the fresh taco flavor; and the store bought (praise!), clean (double praise!), salsa verde and dairy free cheese sauce will shock you with how yummy they are (don’t run away yet.... I’m a cheese lover and I have to tell you, this dairy free cheese sauce is better than real cheese on these taco bowls). One of my ultimate favorite things about this dish is that it utilizes fresh veggies and easy store bought ingredients to pack loads of flavor. Run, don’t walk to your kitchen. This spaghetti Squash Taco Bowl is where it’s at.</image:caption>

      <image:caption>Category: Gluten Free Why you should make this asap: This is the ultimate cheat bread recipe- and it’s not exactly original, but I’ve come up with a variation that I love and I have to share it because, well… we’re talking boxed mix, gluten free, yummy… BREAD. Just take that in and enjoy the ease already. Honestly, it would be rude of me to not share this. The only thing you have to add are a few simple ingredients. While I love making from scratch food, truth is, I don’t always have the time; and if you’ve ever made bread (let alone gluten free!) from scratch then you know time, trial and error is a must. But start to finish, this recipe takes me just over an hour to successfully make- which means I can be eating a giant slice in no time at all. Fresh herbs, garlic, balsamic and olives come together in this soft bread for a perfect bite. I often toast this bread, or warm it up and top it with some vegan salted garlic butter. I eat it by the slice, with a salad or dipped in pasta sauce. I can’t believe I’m gonna say this, but as a tried and true sour dough girl, this has become a favorite to make when the time is right. And I think it’s the right time for you. Get to it. You deserve some bread!</image:caption>

Savory sweet potato hash with Fall herbs and spices, paired with simple avocado, balsamic soaked red onions, a guilt free english muffin and vegan ranch drizzle for the perfect cool down… its basically got it all goin on. I use the Ezekiel brand english muffins because of the dense grain flavor that really holds up to the punch of the balsamic and the weight of the hash. Best part? You only have 5 dishes to clean after all is said and done. Yeah, you read that right. You need a skillet, a toaster, a knife, a spatula and a cutting board. But you don’t need a plate because you’ll eat this straight from your hand the second it’s ready. All this yumminess for such little clean up? Dreams do come true.</image:caption>

This recipe can be made with some key ingredient that are store bought which makes this a very quick meal to prepare.       <image:caption>Founder and Owner of Viddy &amp; Dot My life long love for food and cooking comes from the memories and stories attached to it. On one hand, I’m an amateur cook/baker since I was little- with hours of intense training via the food network channel and cookbook obsessions. I started cooking and experimenting in the kitchen when I was in Jr. High- and Ive never looked back. On the other hand, I’m a theater major with a love for stories and a library of plays and show tunes I keep quietly tucked away for “me time”. Somehow, over the years these two passions have come together, and with the encouragement of my husband, a long dream of launching Viddy &amp; Dot is being realized. My goal is to share recipes that celebrate good food, great people and meaningful stories. Viddy &amp; Dot is my ode to family, friends and strangers who have fed me, taught me and left an impression on me through a good time and good food. It’s inspired by both of my grandmothers (Viddy and Dot) who told me I was good at something, and encouraged me to keep going. This is a passion project for me, and I hope you enjoy it.</image:caption>
